Skinny Bitch Curry

Not knowing what to do on my lunch break plus a nearby Target is a dangerous combination. I think I frequent Target at least once a week just to get out of the office during lunch. I mostly try on clothes and buy some random items that we actually need. But sometimes I start to wander into the book and magazine section of the store. This happened the other day and started thumbing through the Skinny Bitch Cookbook. I read Skinny Bitch back when it came out and honestly, I didn’t really have an opinion on it. I thought some of the info was good but it didn’t profoundly affect my eating habits the way it has for some people. But once I got a glimpse of some of the food in this cookbook, I knew I had to buy it.

I’m kind of a compulsive cookbook buyer. Each new cookbook gives me hope that maybe one day I will cook. Maybe one day I will eat things other than pita pizzas and canned refried beans for dinner. I mean, sometimes I cook, but most often, I’m lazy. Long story short, I bought the cookbook.

After laying on the couch and watching crappy MTV shows that I secretly love for 5 hours post race, I decided I should cook. I thumbed through the dinners section and finally decided on Spicy Vegetable Curry.

I went to Kroger and bought the necessary ingredients.


As I was chopping up all the veggies and getting ready to roll, I realized that I didn’t have any curry powder in my spice drawer. I really did not want to go back to Kroger, so I got together some spices that I thought might be good substitutes – turmeric, cumin and garam masala and then I consulted the Google to see if I was right.


This was seriously one of the best things that I’ve ever made. A lot of the time when I cook, my meals turn out good, but not great. This was great. I did make a few changes in addition to not using curry powder (which you’d never be able to tell, by the way). I used half a red pepper instead of eggplant because I don’t really care for it and I used frozen okra instead of fresh. I also used minced refrigerated garlic and ginger. The recipe that I linked to above is a little wonky, at least in my browser. You are supposed to simmer the sauce for 30 minutes and then an additional 10 after you add the veggies.

I will definitely be making this again. So good. I think I’ll double the amount of vegetables though; it was almost like a soup.

I’m looking forward to seeing what else I can make out of this cookbook. Yum.

Blogger Dinner and Silver Comet Half Marathon

When we planned a blogger dinner the night before my race, at first I didn’t know if I should attend. But then I figured that I had to eat anyway and who better to eat with (well, besides Jason) than other bloggers. Originally there were supposed to be about 9 of us but several people ended up not being able to attend, so it was only five of us that had dinner at Eclipse di Luna last night.

After going to Seasons 52 for the first two blogger dinners, we decided that we needed a change of scenery. Eclipse di Luna is a tapas restaurant. Normally I’m not sure a huge fan of tapas because I don’t seem to get enough food. People usually order meat-centered dishes which I’m not able to eat. I actually suggested this restaurant for last night though. And I definitely had enough food and most everything that everyone ordered I could eat! We had, amongst other things, hummus, ceviche, tuna tartar, caprese salad, a little pizza and yucca fries. I think the yucca fries were my favorite.

Blogger meetups are fun! I think we should do them like once a month. Anyone agree with me there?

We stayed at the restaurant for about two hours. When I got home, I prepared all of my race gear and went to bed. Per the norm before a race, I didn’t sleep well. I think I was worried that I’ll oversleep. Or maybe I was just worried about the race in general. Who knows?

Racing this time of year is tricky. The mornings are pretty chilly but after the sun comes up, it gets much warmer out. I wasn’t sure if I should wear short sleeves or long sleeves. Yahoo weather said it was 39 degrees out when I got up, so I put on a long sleeved shirt.

I got to the race, parked my car at a middle school where we were supposed to park and walked nearly a mile to the start. I don’t know why they had us park so far away! I immediately ran into my friend Dave when I got to the packet pickup. They had a new type of timing chip this year. At least, it was new to me. It looked like a D-tag on the back of your number, but you didn’t remove it and put it on your shoe; you just left it attached to your number.


The beginning of the race was congested. There were people holding pace signs, but I wasn’t able to make my way to the 10 minute mile group, so I ended up standing behind the 11 minute mile sign. I definitely had to weave in and out of people for the first few miles. This race is on a trail so it’s narrow. But after Mile 3 or so, it thins out since everyone around you is mostly running at the same pace. It’s an out and back, but no one is coming back just quite yet. I did see my first person coming back as I passed Mile 5. (The turnaround was a little past mile 7.)

The first couple of miles passed by really quickly. Isn’t it weird how you can run a 5K and it seems to take a long time to get to the end, but in a longer race, the first 5K passes incredibly fast? At least, that’s what happens to me. I took a Gu at Mile 5.

As I was nearing the turnaround, I passed the time by looking for Dave. It’s kind of fun to see your friends on the course while one of you is going out and the other is coming back.

I felt totally fine until Mile 9. Then I just wanted it to be over. My pace definitely slowed around this point and I could feel the infamous underboob chafe and a blister forming on my right foot. I really wanted to walk around Mile 11, so I let myself take two tiny walk breaks. Not sure if they helped or not. I also took another Gu to try to gain some energy.

The last mile seemed to take FOREVER. It was at this point where I really questioned if I want to sign up for something that’s double this distance. I’m still not sure. Half-marathons are hard enough! After what felt like an eternity, the finish line was finally in view. I wasn’t sure what my time was but tried to give it my all. When I crossed the finish line, the time clock read 2:15:45 or so!

PR. 2:15. I did it. After 5 years of not achieving the elusive half-marathon PR, I finally did it! Seriously, do you know how frustrating it is to PR in your first race? I’m pretty sure that I started at least a minute after the start gun, so I think I beat my 2:15 goal too. Yay.

There were shuttles to take everyone back to the parking lots, but the line was long and I thought that walking would be good for my legs, so I decided to walk about 3/4 of a mile back to my car. Jason said that he would cook me pancakes or that we would go out to eat, so the entire time, I thought about what I wanted. Pizza sounded good.

I got home and took a shower and somehow ended up crawling into the bed and sleeping for two hours. Jason had to be at work at 1:30, so there went the pizza idea! Oh well.

Now I’m going to spend the rest of the afternoon lounging on the couch. I think I deserve it!


I was tossing and turning all night. I think I was more worried about getting sick than actually getting sick. I woke up this morning with a stuffy nose and scratchy throat, but not any worse off than yesterday. I’ve been drinking Vitamin Water Zero and Airborne to try to stave off this cold. I feel okay, just a little stuffy, so hopefully I’ll stay that way. Even if I do get a little sick, I think I’ll still be totally fine to run the race on Saturday. Not sure how that will affect my time though.

So speaking of time, I do have a time goal for this race. Time goals are tricky. It feels great to achieve them but it feels awful when I don’t. It’s very important to set realistic goals. If they aren’t, it just sets me up for disappointment. I’m not going to lie though, I’m looking to PR. I think that I can do it and here’s why. In 2010, I have PR’d in the 5K, 10K and 15K distances! How awesome would it be to add half-marathon to that list? My half marathon PR is 2:16:30. And on Saturday, I’d really like to beat that. Ideally, I’d like to run this race in 2:15.

So, there’s that. Going to bed.


The weather today was awful. Thunderstorms and rain all day. The kind of weather that makes you want to curl up in cozy pajamas under a blanket, not put on heels and go to work. Oddly enough, it was hot out though. Oddly hot for the end of October – in the mid 80s. By the end of the day the rain didn’t seem to show any signs of stopping which begged the question, “Do I go home after work or to the gym?” When I got to my car, I realized that it wasn’t raining that hard so I decided to go to the gym. I just had a 30 minute elliptical workout in mind and I figured I might as well get it done.

Going to the gym is the hardest part. It sometimes takes every fiber in my being to not turn left onto 85 North to go home after work! Okay, that’s a little bit of an exaggeration but it is hard to go sometimes. But usually once I’m there, I’m ready to workout. Which is why I was not pleased when I opened my gym bag and found this:


Not only did I bring two right shoes, but now I don’t know which is the older one and which is the newer one.

I came home and decided that it was a sign – I wasn’t going to the gym tonight, so I made a nice dinner instead.


Baked tofu, bok choy and millet. I took some better pictures but accidently deleted them. I’m telling you, this hasn’t been my day. For the tofu, I marinated it in a bunch of random stuff – soy sauce, hot chili oil, lime juice and brown sugar – and baked it for about 35 minutes at 400 degrees. For the bok choy, I sauteed it in some olive oil and made a sauce out of 1/2 cup veggie broth, 1 tbsp soy sauce and 1 tsp cornstarch. The cornstarch makes it thicken up and it tastes like Chinese food. The millet was cooked in a rice cooker with a little bit of coconut oil.

Murphy ate peanut butter out of a kong.


So I’m a little bit worried about two things concerning my race on Saturday. One is that I think I’m coming down with a cold. I had a scratchy throat this morning and now, in addition, I have a bit of a runny, stuffy nose. I’m hoping it’s just a mild cold and I’ll be able to run through it, or it will be gone by then. Two, my knee is bothering me just slightly. It doesn’t hurt when I run, but it’s been kind of acting up after. On Sunday, the day after my 10.5 mile run, it felt very stiff. I didn’t run on Monday and kind of forgot about it until the gym last night. I ran 4 miles and it didn’t hurt at all but it did hurt when I was leaving the gym and walking down a flight of stairs. Hmm, I really hope both of these things are non-issues by Saturday.

Race Week

How did race day creep up on me so quickly? I feel like I just signed up for this race and here it is on Saturday. This will be my seventh half-marathon and third Silver Comet, so while I know what to expect, I always get a case of pre-race nerves. Jason offered to come watch, but this race is not very good for spectators. It’s an out and back on a paved path. You can’t park at the finish line, so Jason would have to take a shuttle from the parking lot which is a big pain. I found out a few weeks ago that my friend Dave is also running the race. He’s way faster than me, so while we won’t run together, it’s nice to feel like someone that I know will be there too.

I need to make sure I’m prepared ahead of time since we’re having a blogger dinner the night beforehand. This means buying some more GU, making a playlist and charging my ipod and figuring out what to wear. Jason found my Garmin (YAY!) so I need to decide if I’m going to use it or not. I typically don’t use it during races because I find myself glancing down at my wrist way too often and if I’m not going as fast as I want to be, it kind of ruins the race for me. We’ll see.

I have to admit, it’s kind of nice to taper this week. Jason and I went to the gym and I ran 4 miles on the treadmill. Afterwards, I wanted to a quick and easy dinner. I’d gone to the Farmer’s Market over the weekend and bought a bunch of veggies, but no ingredients to make a complete meal. Fortunately, we had a box of ravioli in the freezer.


I really like this ravioli. I didn’t even realize that it was vegan the first time I had it. It tasted like cheese. It’s a bit pricey at $4.99, but when you consider that it makes two servings, it’s really not that costly. Plus, they sell it at Kroger in addition to Whole Foods, so that’s a plus.


Ravioli with Zucchini and Goat Cheese
Serves 2

1 package of ravioli
1 extra large zucchini
1 tbsp coconut oil
1/2 cup crumbled goat cheese
salt and pepper to taste

1. Cook ravioli according to package directions.
2. Slice zucchini and saute in coconut oil. Sprinkle with salt and pepper.
3. When zucchini is cooked, mix with ravioli.
4. Mix goat cheese into ravioli and zucchini mixture.

I really liked this. I wasn’t sure about using coconut oil but it gave it a really nice flavor.
