Not a Great Meal

Our Spring-like weather didn’t last and today was raining and gross out. I was a bit sore from yoga, especially my neck for some reason, and thought about skipping my workout, but ultimately decided to go. There were only two miles on the training plan so it was pretty easy to convince myself to go. I ran the first mile at 6.0mph and the second at 6.2mph. My natural pace is probably more around 5.8mph and I keep telling myself that if I want to get faster, I need to run faster. Running at 6.2mph isn’t easy for me, but it’s not impossible. I just have to keep making myself run at that speed and maybe one day, it will feel like my natural pace.

After the gym, I stopped at Whole Foods and picked up some salmon. Even though WF is out of the way, I wanted to make sure that if I was eating fish, I was making a sustainable choice and I didn’t think I could do that at Kroger. I bought Alaskan Wild Coho salmon and used this recipe minus the onion because I didn’t feel like cutting it up.

With the salmon, I also made Apple Stuffed Acorn Squash.

It was a pretty dinner, but I wasn’t really a fan. The salmon had bones in it which I didn’t like. I think that my six months of vegetarianism last year really changed my eating habits. Even though I do eat fish and seafood a little bit now, it just doesn’t taste as good to me anymore. Even sushi, while still good, doesn’t have the same appeal. I didn’t even eat all the salmon. The apples from the squash were good but the actual squash was kind of bland.

Oh well. I tried. Dinner fails are bound to happen, right?

A Real Southern Accent

When I did The Accent Vlog a couple days ago, a few people commented that I had a Southern accent. I’m from Maryland but have lived in Atlanta for eight and a half years. I generally don’t think I have a Southern accent, but I do hear myself saying certain words with a bit of a drawl on occasion. Jason, on the other hand, definitely has a Southern accent. He grew up in South Carolina.

Okay, that’s enough vlogs for a while. Back to regularly scheduled blogging shortly. Like in an hour after I have dinner shortly.

Spring Weekend

Remember how my street looked like this a couple weeks ago?

Well, this is what I wore when I went running yesterday.

It was in the high 60’s all weekend! That’s the great thing about Atlanta. While our winters are short, we get enough cold weather that we really appreciate a warm Spring-like day. It’s not like living in a place where it’s hot all the time. I have no doubt that our winter is not over though. It really doesn’t start to warm up for real until the end of March or beginning of April.

This week was a step-back week on my running schedule. I drove down to midtown to meet Joan and we did about 4 miles around the park. There were so many people out. It was crazy. Really made me miss living intown, but I can always drive there (about 20 minutes) so it’s not that big of a deal.

Tonight, I tried another yoga class with Laura. I’ve only been to Atlanta Hot Yoga a handful of times and I’ve always done the Hot class. I wanted to try another style to see how I liked it. So Laura and I braved the West Coast Super Flow class. Yes braved. It was so hard! The website said it was good for beginners but it seemed pretty advanced to me. I think I might stick with the hot class until I get more comfortable. There were some things that I enjoyed more about this class however. Mostly, that there was music. The hot class is silent.

I need to relax. I went straight to Kroger after yoga and didn’t get home until 9:30. Then I tried to finish a home improvement project. I didn’t finish but really need to decompress before I go to bed.

Favorite Gifts

In the past, whenever I’d make sweet potato fries, I’d make the frozen, pre-cut kind which never turned out quite as good. The reason I did it this way was simple – I didn’t have a sharp knife. Cutting the potato into fry-like shapes was more of a pain than it was worth. So my fries were freezer burned and soggy all the time.

When we got married, one of the things that we registered for was a very sharp knife and I’m so glad that we did. Seriously, having a good knife has made a huge difference in my kitchen.

Sweet Potato Fries that a non-sweet potato liking husband will like

Serves 2

1 large sweet potato, cut into fry shapes
1 tbsp olive oil
¼ tsp salt
¼ tsp pepper
¼ tsp cumin
¼ tsp cayenne pepper
¼ tsp thyme

Preheat oven to 400 degrees.

Cut potato into fry-like shapes.

Coat fries with oil and spices.

Put fries onto parchment paper covered cookie sheet.

Bake for 15 minutes and then flip. Bake for 15 more minutes.

When we registered for wedding gifts, I went a little crazy in the kitchen department. Our friends and family were generous enough to get us a lot of what was on the registry. Some of which we use, like the knife, and some of which we don’t. I was thinking about the top three things we use the most and came up with this:

1. The knife. Obviously.

2. Fiestaware in pretty colors. Eating off nice, bright plates makes me happy.

3. Zojirushi rice cooker. I know that a $150 rice cooker (and this is the smaller size) is a bit ridiculous but I use it all the time. I’m actually using it right now for oatmeal. I also use it for rice, quinoa, lentils, millet, basically anything that has to be cooked in water.

And what we don’t use?

You can guess who added that to the registry! We used it once for a party. (In his defense, he also was the one that picked out the knife!)

Do I Have An Accent?

I saw Caitlin from Healthy Tipping Point doing a video about her accent and I thought it would be fun to do one too. I’m from Maryland, by the way.
