Two Things I Learned

First of all, thank you very much for your recommendations on our vacation. They were very helpful.

I learned two things this weekend. The first being if I drink coffee after my long run, I can get through the day without a nap! Now there is nothing wrong with napping. I’m a big fan. But when I don’t get home from a run until like 3pm on a Sunday afternoon and have a lot of errands that I need to do, taking a 2 hour nap is not exactly ideal. I’m not one of those people who can power nap. If I take a short nap, I generally feel worse.

The second thing I learned was the secret to low-fat baking. Now, don’t get too excited here. My secret is….use someone else’s recipe! I have a habit of trying to substitute ingredients to make a recipe healthier, especially in baked goods, and they never come out quite right. However, if I use a recipe that’s already been healthified and has gotten good reviews, I don’t have to worry about my muffins turning into rock hard hockey pucks or whatever. Maybe one day I’ll know enough about subbing ingredients to figure out how to make my own healthy desserts, but for now, using someone else’s recipe seems to work out.

My coworker and I were talking about Fig Newtons one day and I got the idea that I should try to make them at home. After looking at several recipes, I settled on Skinny Figgy Bars from Fat Free Vegan.

These were easy to make and the center tasted exactly like a Fig Newton!

I’m going to be late for work. I guess that makes a third thing that I have learned – don’t blog in the morning!

  1. Mmm! Fig bars! I’ve been wanting to try to make something like this, I think I’ll try the healthy version you made. I am the same way with naps, no matter how much I feel like I need one I always wake up feeling like I’ve been run over by a car and then jittery the rest of the evening.

  2. TOTALLY agree on finding it hard to make healthy substitutions when baking; this is exactly why I usually hate baking and love cooking.

  4. Power naps are no friend to me either! Glad the coffee is working for you. I don’t bake because I can’t figure it out – need to take a page from your book and find an already healthified one with good review s- smart!

  6. I am the same way- taking a short nap leaves me annoyed and cranky. Long nap or nothing!

  10. I love naps! If I had the time, I’d take one every day (and be less grouchy and more happy)!!

    And I will FOR SURE be trying this recipe, because I LOVE fig newtons as well, but they’re high on cals at the store =(.


  11. If I’m generally well rested a power nap will do the trick for an afternoon slump. If I’ve been suffering from insomnia a power nap does no good. I can’t nap most days and live on coffee in the afternoon. I love my Keurig!

    Coffee would go really well that delish looking fig treat!

  15. I have been craving fig newtons lately! I actually bought figs the other day. Her recipes are incredible! I thought about making those, but I really want more of a cookie. I have some ideas, now I just need to try them. I hope you have a great night Lee!

    I try and work out and hour or two before bed then I don’t have to worry about napping.

  18. Josh is the same way!Little naps make him feel worse- they do wonders for me! The lightened bars look amazing! I love fig newtons- so I bet I would love these. Hooray for pumpkin- I’m totally hoarding it right now :)

    mmmm..I love naps. But I’m like you. Sundays are crazy and that’s when I do my long run.
