Amping Up the Cooking

I’ve been unemployed for two weeks. In those two weeks, I feel like the dishwasher has constantly been running, and it has because I’ve been cooking up a storm. It’s much easier to make a home-cooked meal every night when you don’t have to work eight hours a day beforehand, that’s for sure. Hopefully, I’ll find a way to make this habit stick once I find a job. I am really enjoying both the cooking and the eating. The dish washing, not so much.

Last night, we had fish. I find that the only frozen fish that I like is from Trader Joe’s. I don’t know why, but it tastes so much better. Much better than Whole Foods even. Last night we had salmon.

I was trying to clean up the desktop of my computer (seriously, it’s a mess) and found a folder called recipes. I have no idea where these came from really, but there was about 80 text edit documents with different recipes on them. A google search of the ingredients told me that this Dijon Salmon recipe was originally from Sparkpeople.

With the salmon, we had Mediterranean Kale and Steamfresh Risotto that’s hiding out in the background there. I received this Risotto for free as part of the Foodbuzz Tastemaker’s Program and it’s been in my freezer for months. I didn’t expect to like it, as I don’t really like cooked peas or carrots, but it was pretty tasty. I want to try making my own risotto one day. Preferably while I’m still unemployed because I’ve heard it’s pretty time consuming.

Tonight’s dinner was more of a Lee meal than a Lee and Jason one. I usually save meals that I think look good but Jason might not for Wednesday or Thursday nights, when he is sleeping because of his work schedule.

Jason is not a big fan of soup. I, on the other hand, absolutely love it. Growing up, I ate a lot of canned soup. While I still do buy cans from time to time (I have a preference for Progresso), nothing can beat homemade soup. This was Mushroom Millet Soup with Cheezy Garlic Bread from Oh She Glows.

It’s only two meals so it doesn’t look like much, but I definitely have amped up the cooking a ton. Now I just have to figure out how to do that with the cleaning!
