Easy Monday Dinner

So last night, I ended up eating almost an entire bag of Salt & Vinegar Pop Chips for dinner.  Mind you, eating the entire bag only sets you back 360 calories so it’s not as bad as, say, a bag of Doritos.  I had just gotten home from the grocery store and although I bought food, I just didn’t feel like making it and the Pop Chips sounded (and tasted) very good.

So tonight, I was determined to make something with a little more nutritional value.  On a typical weeknight, I go to the gym after work but am usually starving when I get home, so I usually want something that will cook quickly.  Tonight’s meal definitely fit the bill since I basically didn’t have to do anything.  It only had four ingredients.

Easy dinner ingredients

Brown rice, some random vegetable stir fry bag that was in desperate need of being cooked, tofu and a jar of Trader Joe’s Green Curry Simmer Sauce that I picked up on a whim the last time I was at Trader Joe’s.

I pressed the tofu for about 20 minutes and put the rice in the rice cooker while I took Murphy for a walk.  When I got back, I took out two pans, added about 1 tsp of olive oil in each and cooked the tofu in one and the veggies in the other for about 10 minutes.   After the tofu seemed to brown a little bit, I added it to the veggies and poured in about half the jar of Simmer Sauce and served it over the rice.

Much better!  And then I ate the rest of the Pop Chips.
