Two Ingredient Dessert

We’re having a Halloween party at work tomorrow.  Everyone was asked to bring some sort of candy or treat.  I’m always kind of conflicted with this type of thing, especially when it comes to desserts.  Do I try to make something semi-healthy or do I say eff it and make something that I’m sure people will like?  Though I’ve made bean brownies before (my friend Tanya would disagree, but they were good), usually I opt for the unhealthy treat.  I’m much more confident to in my ability to find a good tasting healthy dish than a good tasting healthy dessert.  My go-to is Oreo Truffles.  Everyone loves these and they’re fairly easy to make with only three ingredients.  However, it’s kind of time consuming to make them, so I went with something easy that I found on Pinterest.  Easy and only two ingredients!

My biggest concern making this recipe was that I didn’t really know what a jelly roll pan was.  I google imaged it and it looked like a cookie sheet, so I put it on a cookie sheet.

I ran into a little bit of trouble, however, when I tried to remove them from the cookie sheet, oh I mean jelly roll pan.  For whatever reason, the recipe specified an ungreased pan, and of course they stuck.


I managed to rescue most of them though and aside from being very sticky, they tasted pretty good.  Ignore the awful picture.  Don’t shoot with an f-stop of 1.8 even if it’s really dark or this is what happens.

The original recipe said it made ten bars at 363 calories each.  I cut mine into 28 bars, so they’re significantly lower in calorie.  Oh, except that I ate three that couldn’t be rescued.  Maybe those don’t count.

I hope everyone is safe from the hurricane.  I was worried about my family in the DC area, but they are all fine.


Rainy Friday Night

Aside from this afternoon, which dragged, this week has gone by quickly which is sort of weird because it’s been somewhat of a trying week.  For a bunch of different reasons that I don’t even want to get into (or really totally know, for that matter), I’ve just been in a pissy mood this week.  So, I was kind of glad to come home tonight and just do nothing.

Although, I had to endure a monsoon first.


What does one do on a rainy Friday night when she has no plans?  Cook, obviously.

I get the majority of my recipes from Pinterest nowadays.  I still have tons of cookbooks, but somehow it’s just easier to look at my pinboards and find something appealing.  I get a little overwhelmed when I try to pick something out of a cookbook.  Maybe I just need cookbooks with pretty pictures, who knows?

There are definitely some things that I’ve made that I haven’t liked (I usually won’t blog about them in that case), but for the majority, most recipes that I try are pretty good.  But every now and again, I find one that is just great.

This was the Warm Spinach Salad with Fried Egg and Potatoes from Martha Stewart.  Thanks Martha, you make a good salad.  Kind of nuts, it was so simple, but so tasty.  This will definitely get a repeat performance.  I always forget how much I enjoy a good potato.  And because I liked it so much, here’s another picture.

The cooking wasn’t over after dinner.  I had some bananas that were looking a little rough.

Would you believe that I just bought these on Sunday and they weren’t even ripe then?!  Anyway, ripe bananas = some sort of bread, only this time, I went with this Almond Zucchini Bread recipe instead of a traditional banana bread.

Blurry picture but I can assure you that it was very good.  Now I am just trying to prevent myself from eating the whole loaf.  You know, with my whole no snacking after dinner (which doesn’t include dessert; I can have dessert.  I just don’t want to mindlessly snack after that.) goal thing.

Cooking Cookies

To be honest, I wasn’t feeling my best yesterday morning. I can’t hang like I used to, I guess. And we didn’t even stay out past midnight or drink that much really.  That’s what happens when you’re in your 30s.

Fortunately, I was able to take a nap and then sweat out my ickiness at the gym.  During the week, it really seems like it takes too long to do the weightlifting and the cardio portions of the LiveFit Trainer.  The weights take me 30-45 minutes depending on the workout and then the cardio is another 30 minutes.  I do not want to be at the gym for over an hour after work.  But on the weekends, when I have more time, there’s really no reason to not do them both.

I did an arm workout yesterday.  I think it was day 42 but I don’t remember and then I did 30 minutes on the elliptical.  It was so boring.  Running for 30 minutes seems to go by quicker.  You’d think it’d be the opposite since running is generally hard (I think) but blah, this was so boring.  I got it done though and did feel better after.

Just like there’s no reason not to do weights and cardio on the weekends, there’s also no reason to not cook a proper dinner and even though I wanted to open a can of soup, I didn’t.  Instead, I made crispy blackened tofu with garlic ginger mashed sweet potatoes.

This tofu recipe was so flavorful and delicious.

The sweet potatoes were good too.  I didn’t have any ginger, so I added a pinch of brown sugar instead.

I served both with some quinoa that I’d made earlier in the week.

The cooking didn’t stop at dinner though.  Oh no, afterward I baked.  A lot.  Friends of ours just had a baby like two weeks ago and we are going to visit today.  I thought about bringing some sort of lasagna or casserole but ultimately decided to bake cookies instead.  Problem was, I couldn’t decide between two recipes.  Then Jason mentioned that there was an Easter potluck at his work today so I decided to make both recipes and split them – half for our friends and half for the people that Jason works with.

And the cookies were….drumroll please.  Mama Pea’s Peanut Butter Dough Balls and Daily Garnish’s Vegan Chocolate Chip Cookies.  Although neither of my variations were actually vegan because Target didn’t have Earth Balance so I just used regular margarine.

I used only chocolate chips because I couldn’t find peanut butter ones that weren’t made with HFCS.  I have certain guildelines.  Never mind what the I Can’t Believe It’s Not Butter has in it.

I’m not going to tell you which one since they are both recipes created by bloggers that I respect, but let’s just say I preferred one of them while Jason preferred the other.  I call that a win.

Okay, I need to get these cookies out of my house before they end up in my tummy.
